Vegan Pink Barbie Pasta

100 ml oat drink
2 pickled beetroot
Juice of 1 lemon and grated zest
2 tbsp vegan creme fraiche
1 garlic clove (finely chopped)
50 g cashew nuts
30 g vegan Parmesan (grated)
½ tsp Pink Salt – pink rock salt
½ tsp strawberry-sesame pepper – premium spice
250g pasta
To top: walnuts, basil, 1 teaspoon vegan creme fraiche
Prepare oat drink according to instructions
Cut the beetroot into pieces
Put all ingredients in the blender (alternatively you can also use a hand blender) and mix thoroughly
Cook pasta
Mix the pasta with the sauce and top with walnuts, basil and creme fraiche
Enjoy!
