In this sweet recipe we conjured up a golden hopping bunny from different pancake sizes. You are guaranteed to surprise your guests or children at Easter brunch.

For the dough for about 10 pancakes
20g Easy To Mix Vegan Egg Powder
200-250ml Easy To Shake Organic Oat Drink
250g flour (Type 405)
PS.: You can also use our pancake mix for the dough instead!
3 tbsp sugar
1 tbsp vanilla sugar
2½ tsp baking powder
1 pinch of salt
Margarine for baking

Ready to enjoy in 15 minutes
Mix flour with sugar, baking powder and salt.
Easy To Mix Vegan Egg Mix according to instructions to form a smooth dough.
Mix the oat drink according to the instructions.
Add the egg to the flour mixture and add enough oat drink to form a smooth dough.
Put some margarine in a pan and heat it up.
For the “bunny shape”, first put about 2 tablespoons of dough into the pan and bake a pancake about 10cm in diameter. Then add about 1½ tablespoons of batter to the pan and bake a pancake about 7cm in diameter. Now we have the “head” and the “back” - now we bake the “rabbit ears” and the “paws”.
To do this, put about ½ tbsp of batter into the pan and bake long oval pancakes.
Continue like this until the dough is used up.
Now cut the banana into narrow slices.
Laying the bunny: Start with the “rabbit ears”, then comes the “head”, then the “back part” and finally the “paws”.
Use two slices of banana as the “sole” and three chocolate drops each as small “bunny paws”.
We put the cookies on the back as “bunny tails”.
