What are the alternatives to meat products actually made of?

When it comes to a meat alternative, the ingredients ultimately depend on how well the product has been processed. The list of ingredients is longer, especially for those that are intended to imitate types of meat.


Because taste and consistency require certain processing, for example with regard to the use of spices.


Let's first stick to the base, i.e. the basic ingredients that will later be used to create the product. In any case, these are plant-based protein sources.

This includes:

  • Soybeans: This is what makes soy meat, tofu or tempeh.
  • Legumes: peas, lentils, broad beans, lupins
  • Seitan (wheat)
  • Sunflower seeds
  • Walnuts

When choosing vegan substitute products, you essentially have two options.

  • You specifically use a meat substitute that comes close to the taste and texture of the meat.
  • You consciously choose a plant-based alternative that you know will taste different. Ultimately, that's exactly what matters - that you like it.


When it comes to vegan substitute products, it depends on what you specifically want to prepare. Accordingly, you can produce your plant-based “ meats ” as needed.

Plant-based meat variation using Seitan as an example

Meatless works particularly well with seitan. All it takes is a few ingredients, patience and a little muscle strength. You mix wheat flour with water and knead the whole thing into a dough.

: Depending on the recipe, there are different information about the quantities. A common variant consists of one kilogram of flour and around 700 to 750 milliliters of water.


The dough must first rest, for which you should give it a few hours - for example overnight. Now it's time to wash it out.


To do this, add water to the dough and knead it thoroughly. This causes the starch to dissolve. You need to change the water several times and continue kneading until it remains as clear as possible and forms a solid lump. You now have the Seitan base.

Since this is rather tasteless per se, you can season the dough directly or marinate the finished seitan.


There are no limits to your imagination. From classic spices such as salt and pepper, which are typical for meat-based dishes, to exotic spice pastes - whatever tastes good is allowed.

For the base, you can use legumes such as kidney beans or lentils. About 250 grams of it pre-cooked, with 100 grams of tender oat flakes and a little plant drink, make a good basis.


There are also other ingredients such as one to two tablespoons of oil, onion, garlic and various spices. Depending on how much liquid you use, the consistency of the mixture can be influenced.


A little flour can help if it turns out to be too sticky. Mix well and let sit for about a quarter of an hour - homemade and ready to use.
