This nugget recipe puts you in a good mood. The vegan nuggets are breaded with our colored vegetable breading. Together with our partners from WIBERG , we serve a purple potato and cucumber salad and a Thai yonnaise. Not only does it sound interesting, it also tastes damn good!

½ pack of Easy To Mix Nuggets
30 g vegan vegetable breading
160 g purple potatoes
100 g cucumber
2 tsp mustard
40 ml apple cider vinegar
60 ml rapeseed oil
2 tbsp vegan mayo
Juice of one lime
1 tsp WIBERG Thai Seven Spice
1 chilli, fresh
2 lemongrass
Salt pepper
Mix Easy To Mix nuggets according to instructions and cool.
In the meantime, boil the potatoes in plenty of salted water for about 15 minutes, let them evaporate briefly, peel and then cut into slices.
Wash the cucumber and cut into slices.
Slice the chilli into thin slices.
For the dressing, mix mustard, apple cider vinegar, oil with salt and pepper and chili.
Mix the cucumbers and potatoes with the dressing in a bowl.
Mix the mayo with lime juice and Thai Seven Spice.
After the cooling time, form nuggets from the chilled mixture, bread them with a little water and the vegetable breading and then fry them until crispy.
Serve nuggets with the potato and cucumber salad and lemongrass and enjoy with the mayo!
