This hearty pumpkin mince casserole is sure to bring cozy autumn feelings into your home. In this recipe, our vegan mince with a pumpkin and potato crust is baked in the oven until golden brown. It really warms your heart! See for yourself!🎃

1 pack of Easy To Mix Hack
50-70 ml organic oat drink
2 tsp Pizza Party spice mix
500g potatoes
½ butternut squash
1 onion
2 tbsp tomato paste
1 can of tomatoes, chopped
1 tbsp margarine
1 tbsp oil
½ bunch parsley, chopped
1 pinch of nutmeg
Salt pepper
Mix Easy To Mix Hack according to instructions and cool.
In the meantime, mix the oat drink according to the instructions.
Peel the potatoes and cut them into pieces.
Halve the pumpkin, remove the seeds, cut into wedges, peel and also cut into pieces.
Cook the potatoes and pumpkin in boiling salted water for about 20-25 minutes. Then drain, add the oat drink and margarine, mash and season with salt, pepper and nutmeg.
Peel and dice onion.
Preheat the oven to 180 degrees top/bottom heat.
After the cooling time, fry the mince with the diced onions and the tomato paste. Add the oil and season with salt, pepper and Pizza Party seasoning. Now add the tomatoes and bring everything to the boil briefly.
Put the mince in a baking dish and spread the puree on top.
Bake for about 35 minutes until the puree is golden brown.
Sprinkle with parsley and enjoy.
