This mushroom omelet can be prepared in no time and tastes great as a hearty breakfast or as a light lunch dish. The herbs give the vegan egg dish a particularly fresh note. So what are you waiting for?

50 g Easy To Mix vegan egg powder
100 g mushroom mix
40g onion
2 tablespoons oil
1 handful of herbs, fresh (e.g. parsley, chives, basil)
Salt pepper
Peel and chop the onion.
Clean the mushrooms thoroughly and cut them in half.
Heat a pan with oil.
First, briefly sauté the onion cubes, then briefly fry the mushrooms.
Mix the egg according to the instructions and add it to the mushrooms in the pan.
Bake into an omelette according to the preparation instructions. Salt and pepper.
Enjoy with fresh herbs!
