1 pack of Fetora
1 red onion / shallot
1 handful of walnuts
1 handful of cherry tomatoes
1 tbsp brown sugar
1 tbsp high-heat vegetable oil
1 pack of arugula
2 peaches
1 tsp sesame seeds 3 tbsp olive oil
1 tbsp balsamic vinegar
Salt & Pepper
Wash the arugula and set aside.
Thinly slice the red onion/shallot. Slice the tomatoes. Mix both with the salad. For the caramelized walnuts: Gently heat the oil and brown sugar in a pan, stirring regularly. Once the sugar begins to melt, add the walnuts and stir well. Once all the walnuts are coated with the caramel, let them cool on a plate. Slice the peaches into medium-thin half-moons. In the same pan, lightly fry the peaches for about 3 minutes on each side and then let them cool. For the dressing, combine olive oil, balsamic vinegar, and sesame seeds. Season with salt and pepper. Finally, arrange the peaches on top of the salad, crumble the Fetora over the top, and spread the dressing evenly. Sprinkle the caramelized walnuts on top and enjoy!
