CHEESY BROCCOLI NUGGETS WITH PIZZAIOLO

  • 300g broccoli

    1 tsp rapeseed oil

    1 onion finely diced

    2 cloves of garlic, chopped ½ bunch of chopped parsley 80g vegan fresh cream 2 tbsp yeast flakes 1 pack of Pizzaiolo

    2 tsp psyllium husks

    Divide the broccoli into florets and place them in a steamer (or pot with a steaming basket). Cook until the broccoli is tender but still firm to the bite (approx. 8-10 min.). Then rinse and pat dry with kitchen paper.

    Meanwhile, heat the rapeseed oil in a pan and sauté the onion for 2-3 minutes. Then add the garlic and fry for another minute. Place the broccoli in a food processor along with the fried onion and garlic mixture and the parsley. Roughly chop, but do not blend until creamy! Then transfer the mixture to a large bowl. Add the vegan cream, psyllium husks, spelt flour, nutritional yeast, salt, and pepper. Mix everything together and fold in the pizzaiolo.
