Asia bowl with meatballs by This is Vegan

Our friends at This is Vegan Magazine have come up with a healthy, delicious recipe using the Easy To Mix Hack. 😍 This exotic variation of the hack makes all Asian hearts beat faster.

Ingredients

  • Easy To Mix Meatball Or Mince
  • 1 broccoli
  • 250g rice noodles
  • 270ml very cold water
  • 3 tablespoons vegetable cooking oil + a little oil for frying
  • Spices: 1 teaspoon pepper, 2 teaspoons spicy spice, 2 teaspoons coriander
  • 1 half onion
  • 1 bunch of fresh herbs (parsley, coriander, chives...)
  • 2 tablespoons soy sauce
  • 2 tablespoons agave syrup, syrup or vegan honey
  • 1 dash of water
  • 1 dash of rice vinegar
  • 2 teaspoons red curry paste
  • Spices for the sauce: 2 teaspoons each of ginger, lemongrass and coriander

preparation
  • Soak the rice noodles in boiling water according to the package instructions.
  • Finely chop the onion and herbs.
  • Place the meatball or minced mixture in a bowl along with the very cold water and oil and stir. Then add the spices, the finely chopped onion and the herbs and stir well again.
  • Then let this mixture rest in the fridge for 30 minutes.
  • Meanwhile, cut the broccoli and prepare the sauce. For the sauce, put the soy sauce, the agave syrup, a splash of water, a splash of rice vinegar, the curry paste and the spices for the sauce in a bowl and mix well.
  • After the 30 minutes, remove the meatball mixture from the refrigerator and form balls out of the mixture with moistened hands.
  • Now bring water with a little vegetable stock to the boil in a pot. Then add the broccoli and cook for about 6 minutes. Meanwhile, heat some oil in a non-stick pan and add the balls. Fry these so that they become nicely browned and crispy on all sides.
  • When the balls are nicely browned, add the sauce and leave on the stove at medium heat for a few minutes.
  • Now arrange the pasta, broccoli and vegan meatballs in a bowl and serve.
  • As a recommendation: If you don't like it quite so dry and simple, prepare the sauce again as stated above and add it to the bowls or simply a little soy sauce.
