Seasonal in March: mushroom scrambled egg bread

Our recipe idea for March

So that you have plenty of time to enjoy the first rays of sunshine in March, this time we'll show you a quick recipe with our "Easy To Mix Vegan Egg". You can prepare scrambled eggs in just a few minutes. The special twist is the roasted walnuts, which are sprinkled over the spinach and mushroom scrambled eggs as a topping. The best thing to do is spread some buttered bread and you have the perfect meal.

Spinach is a real harbinger of spring and provides you and your body with iron, zinc and magnesium, among other things. In addition, spinach consists largely of water and is therefore very low in calories. The high content of the plant substance beta-carotene can be converted in the body into vitamin A, which improves the structure of the skin and hair, improves vision and has an antioxidant effect.

Mushrooms provide important proteins and contain valuable minerals such as iron and, like spinach, are low in calories and almost fat-free. The high niacin content helps your body generate energy and strengthens nerves and muscles.

Seasonal products in March

As already announced, more fruit and vegetables are coming every month, which you can buy locally as fresh harvests. It's best to take our overview with you to your next purchase. It makes a lot of sense to go shopping with a plan, as this avoids impulse purchases and means less food ends up in the trash. So it's always best if fruits and vegetables end up in your shopping cart fresh and only when you need them.

Here's another easy-to-implement tip to combat food waste: On your next trip, look out for vegetables and fruit that have small blemishes or bruises. As long as you process and consume them on time, small flaws don't matter. Otherwise they would probably just sit on the shelves and be thrown away at the end of the day. That would be a shame.

So, have fun cooking and make the world a little greener!
