Summery meatball on elderberry cucumber salad by Thomas Heß

Ingredients

  • Easy To Mix Meatball
  • Elderflower vinegar
  • Onion, white
  • parsley or chives
  • Cucumber
  • Salt
  • Sugar, agave syrup (optional)
  • sunflower oil
  • Mustard (optional)

preparation

  • Mix the Easy To Mix meatball according to the instructions and cool.
  • Meanwhile, wash the cucumber and cut or slice it into thin slices with the peel on. Cut onions into small pieces.
  • Lightly salt the cucumber slices and let them stand for a moment.
  • Cut the parsley into fine strips and add some of it to the cucumber salad with the elderflower vinegar. Mix well.
  • Add the sunflower oil and mix. Season with salt & pepper.
  • After about 30 minutes, take the meatball mixture out of the refrigerator. Mix the remaining parsley and onions into the mixture.
  • Form 5-6 meatballs from the mixture. Fry in a non-stick pan with vegetable oil at low heat. After a short time, fry at a higher level until the desired degree of browning.
  • Place cucumber salad on a plate as a bed. Place the meatballs on top. Complete!
