Stuffed minced zucchini boats by Tales of horizon

It's slowly becoming very autumn-like. That's why we crave stuffed zucchini. Not only is it a balanced meal, it is also easy to prepare and incredibly tasty.
Ingredients for two zucchinis
  • 150g Easy To Mix Hack
  • 1 zucchini
  • 1 tbsp oil
  • 2 cloves of garlic
  • 1 onion
  • 2 tsp thyme
  • 5 tbsp tomato paste
  • 2 tbsp soy sauce
  • 150g cocktail tomatoes
  • Fresh parsley
  • Some vegan sprinkled cheese
preparation
  • Mix the mince with the water and put the mix in the fridge for 30 minutes.

  • Cut garlic cloves, onion and cocktail tomatoes.
  • Heat some oil and sauté onion, then garlic.
  • Add the mince, chop it up and fry for about 10 minutes.
  • Add the tomato paste, thyme and soy sauce.
  • Now stir in the cocktail tomatoes.
  • Preheat the oven to 180 degrees.
  • Wash the zucchini, cut them in half and scoop them out a little with a spoon.
  • Fill with the mince, sprinkle with vegan cheese and bake for 25 minutes.
  • Garnish with fresh, chopped parsley and enjoy.
